DENOMINATION OF PROTECTED ORIGIN "GUIJUELO"
The Protected Denomination of Origin Ham of Guijuelo is one of the Denominations of Origin on the Iberian ham with greater diffusion and commercialization at national and international level.
This denomination was elaborated according to the 15449 Ordinance of June 10, 1986 (BOE June 13), which approves the Regulation of the Guijuelo Designation of Origin and its Regulatory Council, which was modified by 27568 ORDER Of October 23, 1991 and later by ORDER of November 30, 1993.
Only Iberian pigs or those from the Iberian cross with the "Duroc-Jersey" and having at least 75% of the Iberian breed, may supply pieces for the production of hams and paddles protected under this name origin.

Hams and sausages with Protected Designation of Origin Ham of Guijuelo have the following morphological characteristics:
- Elongated and stylized shape.

The production area of the Iberian pigs of the Guijuelo Denomination of Origin must obligatorily collect the processes of birth, breeding and fattening of the Iberian pigs in the provinces and regions located in the west and southwest of Spain and which we name as follows:

Labeling of the Denomination of Origin Guijuelo
In all the hind legs and limbs destined to the elaboration of protected hams and paddles, a numbered seal will be placed, in the abattoir, that will uniquely identify each piece.
The name and / or logo of the Protected Denomination of Origin Guijuelo shall be indicated prominently and clearly in the precinct, the same color being in accordance with the Quality Standard for meat, ham, shoulder and Iberian loin :
- Black: Ham or pallet Bellota 100% Iberian.
- Red: Ham or pallet Bellota 75% Iberian.
- Green: Ham or palette Iberian Field Bait.
After the elaboration process, the product is certified and the numbered wine is placed in the DOP GUIJUELO where, in addition to its brand and the EU symbol, the product type, breed and class are included. Which belongs to the food received.
Bodegas will be able to market boned certified pieces, in portions, or divided as long as the appropriate control and labeling system is guaranteed to guarantee the traceability of the product, ham or trowel, and its category.
